I would have driven back for it if it wasn’t 45 mins away. 😂So I’ve been craving a proper dessert since then. I know it’s past V-Day and all but I forgot to make these PINK PEANUT BUTTER CHEESECAKE CUPS and I’m thinking we should add them to our no-bake weekend list. ✌🏻 Vegan, gluten-free, oil-free, and refined sugar free! 😃 Can you guess what makes them bright pink?!     "Lentil Pasta again!! This time with Smokey Mushroom Sauce and Roasted Baby Tomatoes😉 Loved it!! Tomatoes are such a great addition to this smokey but sweet sauce and it balances it out perfectly. It’s done in 15 minutes tops (because this is how long it takes to boil the water and then cook the pasta). Recipe is super simple but here it is.
    Btw. made a Brownie Chestnut Cake today, and and what a success!! Can’t wait to share the recipe with you!

    Smokey Mushroom Sauce
    2 cups mushrooms (I used button and oyster) - chopped
    150ml almond cream (but feel free to use soy or oat if you want)
    1 tsp smoked sweet paprika
    1/4 tsp chili (or as much you can tolerate)
    1 tsp maple syrup
    2 spring onions (or 1 scallion) - chopped
    Small bunch of parsley - minced
    2 tsp naturally brewed soy sauce or liquid aminos
    Extra Virgin Olive Oil for sautéing and seasoning in the end
    Salt to taste
    Freshly ground pepper
    Baby tomatoes

    Method:
    • Heat the oven on 180 Celsius and put the washed tomatoes to roast, for 10-15 minutes until softened and crinkled. • Sauté onions with spices and pinch of salt on olive oil until wilted and fragrant, add maple syrup and shortly after the mushrooms.
    • Keep sautéing. Add some pepper and soy sauce, then the cream
    • keep cooking for a few minutes on low flame. Taste and if needed add more salt. • mix in the cooked pasta and parsley, season with some more olive oil and top with roasted tomatoes...heaven😍

    Let me know if you make it guys! And do try lentil pasta! It is amazing. Doesn’t stick or fall apart and it isn’t mushy as most gluten free pastas are."

  • While our metabolism is really determined by our gender, age, bodyweight, etc., there are some things we can, and shouldn’t do, to help speed things a long:

    1. Don’t spend hours doing cardio. Yes, cardio burns calories, but eventually your body starts to adapt and soon you’ll have to do more, and more, and more to produce the same result. Instead, focus on being more active in general- Walking, biking, standing, taking the stairs etc.

    2. Don’t buy into fat burning supplements. They’re a complete waste of money and can cause some pretty harmful side effects that definitely won’t be worth it considering they don’t work in the first place. Instead, eat a healthy, balanced diet with lots of veggies and protein and start lifting some weights! That’s the best recipe for fat loss out there.

    3. Don’t worry about doing Intermittent Fasting, Carb Cycling, Keto, Paleo, etc. Master the basics first. Stay in a caloric deficit, prioritize protein, eat your veggies, drink your water, move your body, #treatyoself mindfully and let the results follow.

    The good news is, your life doesn’t have to revolve around eating “clean” and tons of exercise to get the results you want. It’s so much simpler than that!

    Like her baby sunglasses or a piece of lint she found.

    After Reese was born, I've been on a little mission to get my butt back haha
    Operation: Perk is in full swing and it's exciting to see that I've made headway even with self-doubts popping up.

    Can we also talk about PROGRESS for a quick SEC {swipe} ... It requires faith, patience and persistence. ...focus on those small daily habits... And in the moment, I feel impatient to reach that proverbial “finish line”... then always look back with surprise.
    Know what I mean?
    Maybe just me, but it feels like there is a small part of my brain that says, “Maybe OTHER people can do it. But you’re going to be the ONE person this doesn’t work for”
    So this pic is equal parts “of course” I got results mixed with an ounce of WOAH it ACTUALLY worked. 🙆🏼‍♀️ So yay for being able to put in IMPERFECT work and STILL see progress!

  • My aunt brought me back some gnocchi from Italy! I made it with a cashew based sauce and added in some sautéed kale, mushrooms and sun-dried tomatoes. Topped it with Italian parsley, red pepper and Parmesan (optional.) Then, I threw some pesto on the side.. ______________________________________________________________Cashew Sauce: Soaked cashews overnight, tossed them in a blender with some oat milk, charred onion and garlic, lemon, miso paste, salt and pepper

    Pesto: Kale, pistachios, basil, lemon, garlic, miso paste, olive oil, a little water, salt & pepper. ✌🏼 Have a good weekend friends!

  • Food and Socialising 🤗 why is it so important. It’s easy to get trapped in a wellness bubble and focus on the nutritional content of food and think that’s the end of the story but there is so much more to it. I truly believe that the social aspect of food and sharing food is very special and important to overall well-being. It’s easy to think having the perfect diet will make us healthy but without the social aspect of food we are missing out on so much! You can eat all the kale and green juice in the world but if you are avoiding eating out or eating what other people are then that’s not healthy! Everything in moderation ❤️What are the benefits? - eating with other people helps us eat more mindfully which is good for physical and mental health.
    -encourages us to try new foods -allows us to bond with other people
    -helps us to be present in the moment - and also helps provide structure to out day.
    - and so much more!
    So grab some friends, family or a hot date 😘 then cook or go out to eat together! #ndcommunity #nutritiouslydelicia p.s. I apologise for the plastic straws! I forgot to ask for the smoothies without them!

  • Vegan Hot Fudge Sauce
    1/3 cup coconut oil
    1/3 cup raw cacao powder
    1/4 cup coconut sugar
    Pinch of salt
    1/2 cup of brown rice syrup
    2 TBSP Coconut Cloud original creamer mixed with 1/2 cup warm water
    1 cup dairy free semi sweet chocolate chips
    1 tsp vanilla

    Directions: - In a medium saucepan, combine coconut oil, coconut sugar, cocoa powder, salt, brown rice syrup and 1/3 cup Coconut Cloud coconut milk (saving a small amount for later)
    - Bring to a boil over medium heat and simmer 3-5 minutes to thicken, whisking briskly
    - Remove from heat
    - Stir in chocolate chips and vanilla. Whisk to melt chocolate and continue whisking until glossy and smooth. Taste and add additional salt if preferred.
    - Cool 10-15 minutes before serving. The sauce will thicken as it cools. Add more coconut milk to thin out sauce if necessary.
    - Now drizzle to your heart's content!
    - If leftovers (it could happen :)) Store in an airtight container in the fridge for up to a week.
