  • I finally have the desire to cook new things again!!!!!! Dice and sauté 2 bunches of green onions with evoo.
    Then add 2lbs of frozen spinach (not thawed)
    Throw in a ton of seasonings: dill, diced onion, paprika, cumin, turmeric, flavor god everything spicy, and cilantro. Let simmer for about 20 mins with 1/4 cup water. Stir frequently. I added another 1/4 cup half way through because it got too dry.
    Then top with one juiced lemon, sea salt, black pepper, and a ton more cilantro. Stir in 1 cup of plain Greek yogurt.
    Great alone or as a dip! And Leo liked it too! #greensaregood #healthyeating #ilovecooking #yummy #cleaneats #spartanbaby #babyfood

  • A couple weeks ago, I volunteered with @cuanimaldefense to give away free vegan hot chocolate to anyone who watched a 57 second video on what happens to cows in the dairy industry (link to it in my bio). One of the people who stopped to watch said he has a dairy farm but the cows aren’t treated like that. I asked him where the babies end up, because, like any mammal, cows only lactate after giving birth. He said they get to stay with their mothers to breastfeed and that he just takes the leftover milk (which is not standard practice by the way). “But what happens to them after?” I asked. And I asked. And I asked. Because he kept going in circles around the ugly truth. Then, eventually, “we sell them.” “And what do the people you sell them to do with them?” And finally, he admits they’re slaughtered for meat. Yes, the beautiful, curious, sweet babies are SLAUGHTERED. That is an inevitable part of the dairy industry, no matter how small scale the farm. This is only one heinous aspect of what happens in an industry that pumps out milk for the millions of people who still believe it’s ok, or even necessary, for them to us the body of another sentient being to drink breast milk. Anywhere animals are used for financial gain, they are being exploited. They are suffering. There are SO MANY dairy alternatives available today, and that’s because more people are realizing that dairy is cruel, unhealthy and takes a large toll on the environment. A revolution is underway, but it needs to gain speed. It needs people like you to put your money where your mouth is and not just say you don’t want animals to suffer; not just say you want to lower your environmental footprint, but to act like it. Next time you go grocery shopping or out for a treat, please consider the silent victims 🐮 #yourenotababycowbro #februdairyfree

  • NATIONAL BANANA BREAD DAY 🍌
    Vegan, gluten-free, and absolutely no additional sugar! This loaf is naturally sweetened with dates and it’s so good 😍
    .
    INGREDIENTS •2 flax eggs, 2 cups of gf oats, 1 Tbsp cinnamon, 1/4 tsp baking soda, 1 tsp baking powder, 4 small-medium ripe bananas, 15 pitted dates, 2 tsp pure vanilla, 1/2 cup almond milk, 1 tsp apple cider vinegar.

    DIRECTIONS
    Preheat oven to 350, line loaf pan with parchment paper and grease lightly with coconut spray, mix the flaxseed meal with 6 Tbsp of hot water and set aside to thicken. In the meantime, pulse the oatmeal in a high speed blender or food processor to make oat flour. Then, mix all dry ingredients in a large bowl and set aside. In your food processor, add in dates, milk, vanilla and acv. Pulse until smooth. Add in banana and flax egg and process until well combined. Add wet ingredients to dry and mix throughly. Pour into prepared loaf pan and cook for 50 minutes. Let cool completely before cutting. ENJOY!

  • One more workout and I’ve got another program in the books!!!! I think that’s the 11th program I’ve completed. So I’ve got a lot of experience in what works for specific goals.

  • No bean sweet potato chili for the win today. Loaded with protein this is a great way to break my fast. Hubby gave it the thumb of approval too. #winning
    If you are looking to make better food choices, the first piece of advice is look at the ingredients of what you are eating. If you are reading a lot of items you can’t pronounce or a lot of added fillers (sugar is probably the most popular one) then likely that is not the best choice for you or your family. I love sugar as much as anyone else but if I want sugar then I’ll eat sugar, not the by product with sugar added.

    This chili was perfect. Filling. Super easy to make. And clean.

  • Waking up to the smell of pancakes🥞 in the morning was such a favorite memory when I was a kid🤗 And with a day like today (we are on a gloomy, dreary weather roll in Houston and I’m not okay with it🙂🙂🙂🙂), PROTEIN blueberry pancakes were the perfect way to start the day😋 Of course I used my favorite @kodiakcakes buttermilk mix and @alohamoment chocolate🍫 protein to make these🤤 Super easy to make and making them into these mini silver dollar shapes just makes them taste so much better!!🥞🥞🥞 Easy ingredients in the comments down below⬇️ jusssst in case you want to make some tomorrow cause they are delishhh!!😍😍

  • FLOURLESS CHICKPEA BROWNIES 🍫😎 Going strong on a chickpea baking kick with no plans to stop soon 💁🏼‍♀️ I was in the mood for something chocolatey and these will definitely do the trick 🥰 Just dump everything in the food processor and blend away!
    Happy weekend! 🎉 Recipe is below 💛

    HOW TO 👉🏼
    In a food processor, blend till completely smooth:
    1 can chickpeas, rinsed and drained
    1/2 cup natural peanut butter
    1/2 cup pure maple syrup
    1/4 cup cacao powder
    1 tsp vanilla extract
    1/2 tsp each: baking soda & baking powder
    1/4 tsp salt
    Grease a 9x5 inch loaf pan and line with parchment paper. Pour batter in. Dough will be sticky! Wet your fingers with water to press dough into an even layer. Bake at 350 for 25 minutes. Cool in pan on wire rack. Carefully remove loaf and cut into 8 squares. Store leftovers in fridge. Optional (but recommended): drizzle with lots of extra peanut butter 🥜😍
