  • Cooking at home with wife @athenaordz and triple F- Filipino friends Friday night
    1) kropek- deep fried prawn cracker made by @bhavillaflor

    2) tokwa't baboy pig ears fried in pork fat with fried tofu. Finished with soy sauce and pinakurat (sugar cane vinegar with chili, garlic, and ginger)

    3) kropek, tokwa't baboy, rice, shrimp cooked with garlic and salted duck egg, and bulalot made by @atlasmanuelamante- bulalot is soup made with pork shank, bone marrow, corn, bok choy, onion, scallion and patis (fish sauce)
    4) @athenaordz getting some of the bone marrow mmmmm 🤗🤗🤗

  • Asian chili garlic pork meatballs 🤤 I used @marionskitchen Chili garlic marinade in the meat and sauce with a few other ingredients and oh. my. goodness. Amazing! This will definitely be a new favorite of ours. We can't wait to try the rest of her products. Excuse me while I go drink the sauce while I put up the leftovers 😉

  • Pot Roast is the perfect wintertime meal, full of rich sauce and lots of vegetables.

    "Lentil Pasta again!! This time with Smokey Mushroom Sauce and Roasted Baby Tomatoes😉 Loved it!! Tomatoes are such a great addition to this smokey but sweet sauce and it balances it out perfectly. It’s done in 15 minutes tops (because this is how long it takes to boil the water and then cook the pasta). Recipe is super simple but here it is.
    Btw. made a Brownie Chestnut Cake today, and and what a success!! Can’t wait to share the recipe with you!

    Smokey Mushroom Sauce
    2 cups mushrooms (I used button and oyster) - chopped
    150ml almond cream (but feel free to use soy or oat if you want)
    1 tsp smoked sweet paprika
    1/4 tsp chili (or as much you can tolerate)
    1 tsp maple syrup
    2 spring onions (or 1 scallion) - chopped
    Small bunch of parsley - minced
    2 tsp naturally brewed soy sauce or liquid aminos
    Extra Virgin Olive Oil for sautéing and seasoning in the end
    Salt to taste
    Freshly ground pepper
    Baby tomatoes

    Method:
    • Heat the oven on 180 Celsius and put the washed tomatoes to roast, for 10-15 minutes until softened and crinkled. • Sauté onions with spices and pinch of salt on olive oil until wilted and fragrant, add maple syrup and shortly after the mushrooms.
    • Keep sautéing. Add some pepper and soy sauce, then the cream
    • keep cooking for a few minutes on low flame. Taste and if needed add more salt. • mix in the cooked pasta and parsley, season with some more olive oil and top with roasted tomatoes...heaven😍

    Let me know if you make it guys! And do try lentil pasta! It is amazing. Doesn’t stick or fall apart and it isn’t mushy as most gluten free pastas are."

    Calories 897 kcal

    Ingredients
    Rice
    1 cup jasmine rice
    1 1/2 cups water
    Salt
    1/2 lime, juice only
    2 Tbsp minced fresh cilantro
    1 Tbsp honey
    3 Tbsp chicken or vegetable stock
    Salmon:
    1 lb salmon fillets skin on
    1 Tbsp lime juice
    1 Tbsp honey
    2 Tbsp minced fresh cilantro
    Salt to taste
    Avocado Topping:
    1 ripe avocado
    1 tbsp lime juice
    1 tbsp minced fresh cilantro
    1/4 tsp chili powder less for milder topping
    Salt to taste
    Instructions
    Rice:
    Cook rice in salted water per package instructions. Take off heat when it's just done.
    Preheat a medium cooking pan over medium-high heat. Mix stock, lime juice, honey, and cilantro together. Pour the mixture into the preheated pan and let it simmer for about a minute. Take the pan off heat and mix rice into the liquid. Season with a little bit more salt, mix well, and set aside.
    Salmon:
    Preheat oven to 425 and cover a rimmed baking sheet with aluminum foil and grease it.
    Rub the salmon skin with some oil and place the fillets skin down on the prepared baking sheet.
    Mix lime juice, honey, and cilantro together and rub salmon fillets with it on all exposed sides. You can pour more glaze over the top and season with some salt. (Some glaze will likely run down onto the baking sheet, it will most likely get quite scorched in the oven. Don't be scared it's not your salmon burning, it's the glaze that ran down.)
    Bake salmon for 12-15 minutes, depending on the thickness of your salmon fillets.
    Avocado:
    Cut avocado in half, take out the pit, and take off the skin. Chop avocado and add it to a small bowl. Add lime juice, cilantro, chili powder, and salt. Gently mix.
    To assemble the rice bowls: divide rice among two bowls, top it off with a salmon fillet, and top each bowl with half the avocado mixture.
