  • Like so much of what you find in nature, garlic looks like an artist’s hand has been at work to create the gentle blend of colors.
    Garlic is something that I use daily, most commonly in pasta sauces. Sometimes I press it with the blade of a knife to flatten it out, sometimes I put it through a garlic press, sometimes I mince it.
    This garlic is an Italian red garlic which is always what I choose when I purchase garlic. There are a few types of Italian red and the most common in Rome is either from Rome’s Castelli Romani area, or from Abruzzo.
    Some of Italy’s garlics have protected status in Europe: there’s the DOP Aglio Bianco Polesano from the Veneto region, and the DOP Aglio di Voghiera from Ferrara in Emilia Romagna. One of the most flavorful garlics is the Nubia red garlic which grows in the province of Trapani in Sicily.
    Garlic is a species in the onion genus, allium, and is related to shallots, leeks, chives and onions. Elephant garlic, on the other hand, isn’t actually a true garlic; it’s a variant of the garden leek.
    Garlic has been used in Italy since the time of ancient Rome when it was “much used for food among the poor”, according to a Tufts University publication.
    Over 80% of the world’s supply of garlic is produced in China so be aware when you purchase garlic as to where it comes from, and that’s not always simple to discern.
