- Rock n roll Friday night as ever.....
The things you do to keep yourself occupied!
So since November I've been trying to get hold of the clothes collection guy.
He's brill..... comes to the house.
Bag it, weigh it, pays you cash and leaves. .
Well unsure what was going on so this lot has been stuffed away behind and under Maes bed and today I finally got hold of him.
Vans been out of action so if I can bring it he'll take it.
Good job it's just down the road! .
So sorting through it as all 12 dustbin bags have conveniently ripped. .
I certainly have some more clothes to add to the pile as well as the kiddies. .
I appear to be shrinking still and well the kiddies have grown even more. .
Getting it all ready now to fill the car ready for Monday morning.....
Then hopefully a day out with the monies next week with the kiddies. .

- What an incredible dinner I had tonight!! Yum yum yum yum! You’ve probably noticed throughout my recipe posts I love all things pasta🍝 !! So I’m always on the lookout for healthier versions of my faves. I made this zucchini ravioli tonight with cashew nut ricotta and left over veggies in the sauce (you could always do a side salad but I prefer to just get my veggies in the sauce). I’m not one for measuring so I’ll recap the recipe here as close as I can remember 🤣🤣
Cashew nut ricotta 🍝
👩🍳1.5-2 cups cashews (soaked if possible but I never do) and drained 👩🍳 juice of one lemon 👩🍳herbs of choice, nutmeg, Basil and chives tonight 👩🍳 vegan milk of choice 1/4 to 1/2 cup
👩🍳 blitz in a food processor or bullet until consistency of choice, add more milk if needed
👩🍳 2-3 zucchini’s shaved with a veggie peeler, Lay 2 pieces lengthways and 2 pieces crossways to form a cross
👩🍳 place a spoon of the cashew nut ricotta in centre and fold up like a little present 🎁, repeat and place to side
Napoli sauce 🍝 👩🍳 whatever you like really but I did...
👩🍳 half a red onion 👩🍳 1 red capsicum 👩🍳 2 cloves of garlic 👩🍳 handful of baby spinach 👩🍳 mushrooms finely chopped
👩🍳 2 table spoons of tomato paste 👩🍳 dash of red wine 👩🍳 dash of passata
👩🍳 tin of chopped tomatoes 👩🍳 sauté veggies 👩🍳 cook off wine 👩🍳 add tomato paste, Passata and tomatoes, and simmer
Assemble 🍝 👩🍳 place some sauce in bottom of oven proof dish
👩🍳 arrange zucchini parcels in dish seam sides down 👩🍳 top with remaining sauce and vegan cheese if desired 👩🍳 bake for 25 minutes at 190 Celsius fan forced
Serve and enjoy! Fresh basil is also amazing but I didn’t have any 🤣 this was seriously so delicious. I took inspiration from a variety of recipes over the years and previously making cashew ricotta for a lasagne in the past. I’m all for winging it if you don’t have all ingredients, no one wants to hit the supermarket for one lost ingredient, so get creative, google and improvise 😘👊
