  • On my recent trip to Udaipur I tried the classic Dal Baati Churma at a local restaurant Krishna and it was fairly average . I've early memories of having many versions of this dish and best ones were made by my grandma or her side of the family.
    My grandmother is a Marwari and I get my knowledge on this subject straight from her. Baati as many would know is a wheat dough ball cooked traditionally over Uplah or Kande (dried cow dung cakes) and sometimes wood as well. These days we get versions that don't taste the same because they're baked in ovens and they lack the aroma that the baati would catch on to when cooked on Kande or wood. Having said that you can still crush an oven baked Baati pour some ghee and boora (powdered sugar) and enjoy it as is like a Churma or with a Panchratan Dal. Some secret recipes call for a lehsun chutney on the side too! Which is your favorite baati and where and why?
