It was a satay kinda night. Chicken (thigh filet) satay/skewers, spicy peanut sauce for my husband and I; non-spicy peanut sauce for my in-laws, red onions, cucumber, tomatoes and cooked rice cubes. All homemade from scratch.

Where art thou now?
My husband gets super excited when he knows I am making risotto for dinner. I usually cook for 4 even though it's only for the both of us. And he usually takes the leftovers to work the next day. 😊

I like them rare or medium rare! It just melts in your mouth. And to serve it with pickled shallots, carrot crisp and baked mashed potato/sweet potato, ohmahgad!!!!!!! .

I know people say carbs are bad. Well, it is not! Too much of anything is usually bad.. However, totally excluding it from your diet is also bad! Recent study has shown that Low and high carb diets can increase risk of early death. So, eat healthy & consume everything in moderation. .
Speaking of carbs, I definitely enjoyed my lunch. 😍 Mushroom filled tortellini, avocado, mozzarella, corn, tomatoes and eggs. Dressed with olive oil & thick balsamic vinegar.

Self pick berries. You pay for what you have in the containers but not for what you eat while picking the berries!!!!! That's a sweet deal because (I am not shy to say that) I gracefully stuffed my face with A LOT of blueberries!!!! 😋😏. .
