  • Woke up to snow falling outside my window and immediately decided to skip the gym and stay in bed a little longer ✨ .

    Think I’ll also make this warming and comforting Black Bean Mushroom and Carrot Soup, and cannot wait to dive in later on. Recipe linked in profile: https://gardeninthekitchen.com/black-bean-mushroom-carrot-soup/ .

    Ingredients
    2 tbsp olive oil
    1 whole shallot, minced
    2 medium carrots, chopped
    1 cup bella mushrooms, sliced
    1/4 cup red wine (optional)
    1 can 15oz black beans
    1 cup vegetable or beef broth
    2 cups kale, chopped
    1 pinch sea salt and fresh ground pepper, to taste
    1/4 tsp red pepper flakes
    1 tsp fresh thyme .
    .
    Instructions
    Heat oil in a medium soup pot or dutch oven. Add in shallots and cook until fragrant (2 mins). Add carrots, sauté (2mins) then add in mushrooms.
    Season with salt, fresh ground pepper, red pepper flakes and fresh thyme. Stir and continue to sauté (2 mins). Add red wine and cook until reduced.
    Meanwhile pour half of a can of black beans into a food processor or blender and pulse to form a thick bean sauce.
    Add vegetable or beef broth, bean sauce and remaining can of beans into the soup pot and stir. Cover and bring soup to a boil (3-5 mins).
    Add kale, stir and simmer for up to 5 minutes .

  • I tried out some Vegan Pho broth (rice noodles soup) from feast box uk and it only took a maximum of 25 mins to make from start to finish. It tasted quite good too.
    Their recipes are included in their new delivery home kit on their website.
    I’m off work today so I’m going to be chilling and doing absolutely nada until it’s time for the little one to come home from day nursery.

  • Venus De Milo Soup

    Growing up in Rhode Island, my Stepfather used to love eating this Venus De Milo soup. After moving to WV, he began missing some of the flavors from home, so my mom got his mother’s recipe and began making it for him. I was lucky enough to have my mom teach me this evening, so I wanted to share it with you all! Enjoy! .

    Ingredients:
    1 lb ground beef
    1 medium onion, diced
    3.5 cups beef broth

    23 oz can tomato soup (family size can)
    14.5 oz can diced tomatoes
    1 packet Lipton onion soup & dip mix
    24oz bag of frozen vegetables (ours has carrots, corn, green beans and peas)
    1/2 cup small shell pasta (we used ditalini)
    Salt & pepper for sprinkling .

    Instructions:
    Heat soup pot over medium heat. Add in onion and sauté until translucent. Add in ground beef, season with salt & pepper and sauté until brown. Add in beef broth, tomato soup, water, tomatoes and onion soup mix. Bring to a boil, then reduce the heat and simmer for 5 minutes. Add in frozen vegetables and simmer for another 10-15 minutes, or until the veggies are tender. Stir in pasta and cook 8 more minutes.

    Thoughts that preceded this dish:
    1. Can’t make potato leek soup without potatoes...Uhh but I need to use the leeks.
    2. What can I throw that leftover turkey into before it goes bad?
    3. There isn’t enough counter space for all the winter squash we’re getting from @yellowbirdfoodshed
    As a result of necessity this soup was created, I call it Leftover Thanksgiving Dinner soup because it definitely tastes like I should have made it a few months ago. • Squashes including butternut squash roasted and puréed were added to sautéed leeks, garlic, and shiitake mushrooms, leftover turkey breast, veggie broth, white pepper, sage, oregano, and salt. Topped with the squash’s toasted seeds and crispy bacon, this soup was hearty but not too heavy. •
