    Recipe:
    ✔️2 cups oat flour
    ✔️1 tsp baking soda
    ✔️3/4 tsp baking powder
    ✔️pinch of salt
    ✔️pinch of all spice
    ✔️1 1/2 cup mashed bananas
    ✔️1/2 cup maple syrup
    ✔️1/4 cup almond milk
    ✔️1/4 cup oil
    ✔️2 tsp vanilla extract
    ✔️ optional: dark chocolate bits & an extra banana to decorate as shown.

    Mix dry and wet ingredients seperately then mix together. Bake for 38 mins in the middle rack.

    I took a whole fresh pineapple and blended it down with ginger I got from my local homies at @spadeandclover then mixed that with fresh made creamy and salty cashew butter. Then I added more crunchy cashews along with coconut butter and of course my granola. Just like everything else it is sweetened with coconut sugar and an all organic stevia so it is vegan/gf/processed sugar free/ soy free. Then no Cookie of Abundance would be complete with a fresh black CHERRY ON TOP. It is crunchy yet cakey with the cherry. Tart but sweet with the zing of ginger right at the end with creamy coconut butter all through it and yummy crunchy cashews and granola for a sweet and salty crazy texture experience. 🤸🏼‍♀️😛

  • Pie vegano 🥧 de frutos rojos 🍓 🍓 🍓 .
    Base: .
    ⭐️-1 tz harina de almendra o cualquier nuez de preferencia molida .
    ⭐️-1/2 tz coco rallado 🥥 .
    ⭐️-1/2 tz dátiles deshuesados .
    ⭐️-1/2 cdta sal .
    ⭐️-2 cdas aceite de coco 🥥 .
    ⭐️-endulzante de preferencia .
    Relleno .
    ⭐️-1 tz frutos rojos congelados (yo usé frambuesa) .
    ⭐️-1 tz nuez de la India (remojar por mínimo 4 hrs y luego enjuagar) .
    ⭐️-1/4 tz leche vegetal (yo usé de almendra)
    ⭐️-1/4 tz miel maple o endulzarte de preferencia .
    ⭐️-jugo de 1 limón.
    ⭐️-1 cdta vainilla .
    .

    Procedimiento: .
    .
    1. Colocar todos los ingredientes crudos para la base en un procesador de alimentos y mezclar hasta que estén bien incorporados, pero todavía ligeramente gruesos “chunky” los pedazos. (Que se pueda tocar con los dedos y se sienta una pasta pegajosa)
    .
    2. Coloca la masa de la base en un molde para pie 🥧. Con los dedos ve moldeando la base que quede esparcida por todo el molde. .
    3. Tienes la opción de hornearlo para que esté un poquito más crujiente x 15 min a una temperatura de 250 grados C . La segunda opción es mantenerlo RAW. Meterlo al congelador por unos minutos.
    Para el relleno: .
    .
    4. Colocar los ingredientes del relleno y procesar hasta que queden bien incorporados (trata de no añadir tanta leche/ líquido para que la consistencia sea más cremosa) .

    5. Sacar la base del pie del congelador y rellenarlo 🥧 con la crema
    .
    6.Refrigerar por mínimo 2 horas, para permitir que la corteza se endurezca. .
    7. Después de refrigerar, adórnalo con berries y ¡disfruta!

  • CRUMBLE DE AMEIXA

    Essa sobremesa é muito simples, cheira que é uma maravilha e é uma delícia pra tomar com café à tarde. Dessa vez, fiz de ameixa (aquela vermelhinha, igual à da última foto), mas o crumble pode ser feito com muitas frutas... já fiz de maçã, de banana, pêra e até de frutas vermelhas.
    .
    Pra essa receita, usei cerca de 400g* de ameixa vermelha. Lavei bem cada uma e piquei grosseiramente no fundo de um refratário (que vai ao forno depois). Enquanto preparei a massa, já acendi o forno a ~240 graus para preaquecer. Num recipiente, juntei 1/2 xíc de farinha de aveia + 1/4 xíc aveia em flocos finos + 1/4 farinha de linhaça + 1/2 açúcar demerara + 1 col sopa de canela + 1 pitada de sal + um punhado de nozes picadas (a gosto). Misturei tudo e acrescentei 1/2 xíc de óleo de girassol**. Fica na consistência de uma farofa grossa. Depois, foi só arrumar em cima das ameixas picadas e levar ao forno por cerca de 40 min. A parte difícil é esperar esfriar: mas é necessário, pois a crosta ficará mole enquanto estiver quente. Só fica firme e crocante quando esfria um pouco.

    *Essa era a quantidade que eu tinha em casa, mas como as minhas ameixas estavam muito maduras, elas derreteram muito e sumiram um pouco. Como eu gosto de sentir mais os pedaços da fruta, eu dobraria tranquilamente a quantidade de ameixa pra esse tanto de massa.
    .
    **Eu preferiria ter usado óleo de coco, mas o meu acabou, então usei o único óleo vegetal que eu tinha em casa mesmo.
